The Allergen Training Course

Highfield and The Anaphylaxis Campaign’s Allergen Training Courses are recommended for technical managers in the food industry and for those responsible for the management or internal auditing of allergen control systems and internal allergen training.

The “core” Allergen Training Course is “Implementing the Standard” which takes place over 2 days. All delegates will receive a free copy of the Anaphylaxis Campaign Standard for Food Manufacturers plus accompanying Guidelines and additional amendments, worth £65.00.

Delegates can also attend an optional, additional third day of training “Internal Auditor & Internal Trainer”.

Core Course – “Implementing the Standard” 2-day course

 

Who should attend?

Technical managers in the food industry and those responsible for the management or internal auditing of allergen control systems and/or internal allergen training.

Course content

Day 1

  • Allergic reactions, symptoms and treatment
  • Demographics (who is affected)
  • The main food allergens
  • Legislation and labelling
  • Sampling and testing

Day 2

A Case Study makes up Day 2, where delegates create an example of an allergen Risk Assessment, covering:

  • Allergen policy
  • Management
  • Preventing cross-contamination
  • Crisis management
  • Supplier assurance
  • Factory procedures and environment including transport, storage and segregation, scheduling, waste management, cleaning and emergency action
  • Labelling and communication
  • Personnel and training
  • Management review

A delegate pack will be provided.

Duration

14 hours delivered over 2 days, including a short multiple-choice examination.

Qualification

All successful candidates will receive the Anaphylaxis Campaign/Highfield certificate demonstrating their ability to implement the Standard.

“Internal Auditor and Internal Trainer” - optional additional 3rd day

 

This is an optional additional day’s training following the core 2-day course, providing delegates with the knowledge and skills needed to audit their operation against the Standard and to demonstrate effective allergen management. It will also give internal trainers the knowledge to train staff to comply with the requirements of the Standard..

Who should attend?

Those persons responsible for internal verification of the Allergen HACCP system and internal training.

Internal Trainer - key areas addressed:

  • Review of the requirements for training the Standard
  • Target audience
  • Preparation
  • Aims and objectives
  • Evaluation and effectiveness

Duration

7 hours delivered over 1 day. This can be attended as an additional day following the core 2-day course (see above).

Qualification

All successful candidates will receive the Highfield certificate demonstrating their ability to:

  • internally audit against the requirements of the Standard.
  • internally train staff to comply with the requirements of the Standard
