The Science Behind Food Safety

There is so much confusing advice given about food safety that it is difficult to know what is accurate. Information purporting to be science based may be influenced by politics or by commercial interests, it may be dated or from dubious origins. Trainers need to have an open mind and reliable sources of information. This page provides a collection of science-based papers.
